Ingredients

 

Flour: 190 grams

Golden caster Sugar: 150 grams

Dark brown Sugar: 50 grams

Baking Soda: 1 teaspoon

Salt: 1/2 teaspoon / good pinch

Cinnamon: 1 teaspoon / or to taste

Ripe Bananas: 4

Eggs: 2 large, lightly beaten

Unsalted Butter: 115 grams, melted and cooled

Vanilla Extract: 1 teaspoon

Chocolate Chips: 175 grams (chocolate is always good)

Optional: 120 grams chopped walnuts (if you like nuts)

 

Instructions

 

Preheat oven to 175°C. Grease and line a loaf pan (23 cm x 13 cm x 8 cm) with parchment paper.

In a large bowl, whisk together the flour, both sugars, baking soda, salt, and cinnamon.

In a separate bowl, mash the bananas well. Add the beaten eggs, melted and cooled butter, and vanilla extract.

Gently fold the wet ingredients into the dry ingredients until just combined.

TIP: Keep it lumpy to ensure a fluffy bread.

Fold in half of the chocolate chips and optional walnuts.

TIP: Gentle folding keeps the bread tender.

Pour the batter into the prepared pan and top with the remaining chocolate chips.

Bake for 55-60 minutes or until a skewer inserted in the centre comes out clean.

Allow to cool on a wire rack for about 30 minutes before serving.
